Sweet Potato Casserole
This is kind of part of the Thanksgiving Turkey post from yesterday but also not. I have a sweet potato casserole recipe that is really more like a dessert but it is OH so yummy.
Sweet Potato Mixture
3 cups of mashed sweet potatoes
1 cup of sugar
1/2 teaspoon of salt
1 teaspoon of vanilla
2 eggs
1 stick (1/2 cup) of butter
Crust Mixture
1 cup of brown sugar
1/3 cup of flour
1 cup of chopped nuts (pecans or walnuts)
1/3 stick of butter, melted
Directions:
Combine the crust mixture in a bowl and set aside. Combine sweet potato mixture in a bowl in the order listed. Pour sweet potato mixture into a buttered baking dish. Sprinkle the surface evenly with the crust mixture and bake for 30 minutes at 350 degrees.
Enjoy.

This is how it looks BEFORE it's baked. After it's baked, it disappears too quickly for my camera to capture. I think my husband may be the culprit since this is his favorite dish ever. |
