Sweet Potato Casserole
This is kind of part of the Thanksgiving Turkey post from yesterday but also not. I have a sweet potato casserole recipe that is really more like a dessert but it is OH so yummy.
Sweet Potato Mixture
3 cups of mashed sweet potatoes
1 cup of sugar
1/2 teaspoon of salt
1 teaspoon of vanilla
2 eggs
1 stick (1/2 cup) of butter
Crust Mixture
1 cup of brown sugar
1/3 cup of flour
1 cup of chopped nuts (pecans or walnuts)
1/3 stick of butter, melted
Directions:
Combine the crust mixture in a bowl and set aside. Combine sweet potato mixture in a bowl in the order listed. Pour sweet potato mixture into a buttered baking dish. Sprinkle the surface evenly with the crust mixture and bake for 30 minutes at 350 degrees.
Enjoy.

| This is how it looks BEFORE it's baked. After it's baked, it disappears too quickly for my camera to capture. I think my husband may be the culprit since this is his favorite dish ever. |
